A Sweet (Potato) Tradition Rick McCart poses with his Beauregard sweet potatoes. On the left, the tuber weighs 11.3 pounds. The one on the right is 7.6 pounds. McCart said he pulled several other 4 to 5 pounders from the garden. When asked what he plans to do with them, McCart flashed a smile and said, “Eat ‘em!” Rick’s father, Delbert McCart, grew this 10.21-pound sweet potato 18 to 20 years ago, he said. All the sweet potatoes were grown in the same garden on the outskirts of Willow Springs. “As we were digging and planting, we were just giggling and laughing. We said, ‘I bet dad is just grinning from ear to ear’.”
